For a demo or a tour ride, a person over the wieght limit is probably not a problem because of the short time on the machine or the relatively slow speeds.
However, another consideration for a fat person on the Segway is that s/he may not have the proper clearance between the stomach and the handlebars at full speed. Segway recommends that there always be a gap there for safety.
